Strawberry Almond Flour Blender Cake

Now that I've started to train for another marathon I've had to really focus on eating enough calories everyday. Thankfully, it's strawberry season in my part of the world, and I recently began to make this super easy, gluten-free cake recipe to use up some of our fresh picked strawberries (I adapted it slightly from a recipe that I found on the website I have not taken a photo of it to post because I keep forgetting to do so, but it looks like an ordinary 8 inch cake when it's baked.

Strawberry Almond Flour Blender Cake




  • 1 3/4 cup almond flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 2 Tbsp honey
  • 3 eggs
  • 1/2 Tbsp pure vanilla extract
  • 4 Tbsp butter
  • 1/2 cup quartered strawberries (I've used a bit more than this each time and it's still good)
Preheat oven to 350F.




Grease an 8-inch round cake pan. Trace the bottom of the pan on parchment paper, cut out circle and place on bottom of pan.



Melt butter in a small pan over medium/low heat until browned. Set aside.



In a blender pulse almond flour, salt and baking soda until combined. Add honey, eggs, vanilla, and brown butter. Blend until smooth.



Pour mixture into a bowl and fold in strawberries. Pour batter into prepared cake pan. Bake for 25-30 minutes.



This is enough to serve my family of 6 generously for dessert with about 1 to 2 slices left over. I hope you enjoy it as much as we have!

Hi Vik,
That is a great idea, but I’m about 99% sure that I won’t be able to figure out how to do so. I am very, very unsavvy with this page and programming.
I’ll probably end up just posting updates from time to time. As of today I’ve raised almost $1300, so am only $2200 away from my goal.

Hi Jess, I have never baked with almond flour, but I hear Honeyville is a good brand. Yes, do a big DONATE post. I’m in! And on your donation page, are you gonna put one of those gauge-thingys under your photo, so people can see how the process is going?

At this point I myself DO want the biopsy to show ongoing damage (because otherwise I’ll feel like I’m back to square one, wondering why I still feel sick). But my intestines and I appreciate your good wishes! :)

Hi Molly. I am very excited about the marathon and so far training is going well. I would love to be able to get donations from some fellow celiacs, like you, as the time nears. Thank you in advance.
I hope to someday cross paths with Peter and Kelli because I have much admiration for what they have done, and continue to do, for our community.
Thanks also for continuing to write about your experience with enrolling in the CeliAction Study. Although I don’t want your biopsy to show ongoing damage, it would be cool if you were accepted into it. I was excluded because the nearest center is >100 miles away from me.

I’ve been using Honeyville Blanched Alomd Flour which I buy in 5 lb bags on Amazon. Have you found one that you like?
Also, just to warn you, but I will probably be reaching out my readers this fall to ask for donations for the marathon (I agreed to raise $3500 for the Celiac Disease Foundation).
